What is Pit-style BBQ?
Pit-style = time + smoke in a well-seasoned smoker. We start with oak wood for heat, then add hickory, apple and cherry for flavor. Apple and cherry wood is sourced locally. Our smokers are ‘ugly drums’. They may not be pretty, but steel drum smokers win competitions all the time. Our focus is on the quality of meat and quality of smoke.
What is Kansas City style BBQ?
Kansas City BBQ is dry rubbed, smoked with a mixture of wood, and served with a sweet sauce on the side. A dry rub is a blend of spices applied to the meat before smoking, as opposed to a marinade which is wet. The wood mixture changes based on the type of meat being smoked.
Our meat is served dry, it stands on its own without sauce, but you can add sauce to taste. Our sweet sauce is a tomato/molasses based sauce, but it is oh so much more than that. It has been awarded best sauce on the planet. We are not joking. The sauce you get on our sandwiches is more complex and delicious than any sauce this side of the Mississippi. We have a Carolina sauce for those who know and love BBQ from our neighbors to the east.
